Oatmeal Pancake Recipe

What better way to start the day with some healthy pancakes with honey and berries to fuel the morning, increase energy levels and have a productive day. A lot of granola bars, cereal and fruit yogurts contain excess sugar resulting in a mid morning energy crash. Oats is a great source for vitamins, minerals, fiber and antioxidants – a delicious way to kick start the day. If you are not a fan of a plain oatmeal bowl, oatmeal pancakes is a way to shake things up!

Ingredients

  • 2 eggs
  • 1/2 cup milk
  • 1 banana
  • 1 1/2 cup rolled grinded oats
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • Dash of cinnamon
  • Honey
  • Jam

Instructions

  1. In a large bowl mix all the wet ingredients (mashed banana, eggs, milk, vanilla) then add the dry ingredients (grinded oat flour, baking powder, salt, cinnamon)
  2. Heat pan to medium heat and add butter. Pour the pancake batter, cook for about 2-3mins until golden brown and tiny bubbles appear. Flip and cook for 2 more mins.
  3. Serve with fresh fruits and drizzle of honey.
