
What better way to start the day with some healthy pancakes with honey and berries to fuel the morning, increase energy levels and have a productive day. A lot of granola bars, cereal and fruit yogurts contain excess sugar resulting in a mid morning energy crash. Oats is a great source for vitamins, minerals, fiber and antioxidants – a delicious way to kick start the day. If you are not a fan of a plain oatmeal bowl, oatmeal pancakes is a way to shake things up!

Ingredients
- 2 eggs
- 1/2 cup milk
- 1 banana
- 1 1/2 cup rolled grinded oats
- 2 tsp baking powder
- 1/2 tsp salt
- 1 tsp vanilla extract
- Dash of cinnamon
- Honey
- Jam
Instructions
- In a large bowl mix all the wet ingredients (mashed banana, eggs, milk, vanilla) then add the dry ingredients (grinded oat flour, baking powder, salt, cinnamon)
- Heat pan to medium heat and add butter. Pour the pancake batter, cook for about 2-3mins until golden brown and tiny bubbles appear. Flip and cook for 2 more mins.
- Serve with fresh fruits and drizzle of honey.
